Doing Not Thinking


My goals are to take back my garden and to properly perserve my harvest. With that established it leads me to a question...When you dont have enough of something to perserve a batch can you throw it into the fridge until you have enough? And if you can do that, how many days in the fridge til it HAS to be done?

So glad to have you on board for the challenge!!!!

Sure you can put stuff in the fridge. I put berries that are destined for jam in the freezer until I have enough all the time. As for how long, you should always can at the height of ripeness. Don't let things get overripe too terribly much and of course not rotten. Remember canning doesn't make it more fresh - it just preserves it at whatever state it was in fresh and most likely will make it a little softer simply because of the canning/heating process.

Kathie already answered this, but I'll add that i am using last year's peppers in this years salsa (due to a failing pepper crop this year and an overabundance from last year). My MIL freezes her peppers until she has the other ingredients for wahtever it is she is canning.

Your garden looks great! I can relate to both of your goals - properly preserved harvest has been a challenge for me this year. It is the first year I have canned/attempted to preserve for winter. Good luck! If you learn of any tips, let me know. =)
