I put berries that are destined for jam in the freezer until I have enough all the time. As for how long, you should always can at the height of ripeness. Don't let things get overripe too terribly much and of course not rotten. Remember canning doesn't make it more fresh - it just preserves it at whatever state it was in fresh and most likely will make it a little softer simply because of the canning/heating process.Anonymousnoreply@blogger.com
